Cheese Products From The Foundation Of Baron M. Tositsas

The Tositsa Foundation Dairy has been operating in Metsovo since 1955 and has been able to produce 170 tonnes of sheep, cow's and goat's milk annually, utilizing some 1700 tonnes of milk, which stand out for their quality. Cheeses that are hard-to-find and produced in limited quantities are: Metsovone which is smoked cheese, semi-hard Metsovella, sweet Gruyere-type Gruyere, scrambled parmesan, and Pepper Matsoviso - "Sevre" type of goat.
